Chocolate muffin in a cup: Quick breakfast dessert recipe

Shuba recommends a quick microwave dessert recipe for a chocolaty, savory, and delightful treat when you don't have time for a pie in the morning.

You can whip up a batch of these chocolate-coffee cup cakes in no time at all

Not only that, but you can make it with just a standard spoon instead of scales, making it ideal for breakfast or as a sweet snack for company on the way.

To begin, whisk together the flour, cocoa, instant coffee, sugar with vanilla extract, baking soda, and melted butter (set aside 10 grams for greasing the baking cups).

In the next step, whip the egg and sugar until they are frothy, then whisk them into the batter with the milk. Blend until combined; the mixture should have the consistency of thick sour cream.

Butter two 150 ml cups and fill each with batter till it reaches two thirds of the capacity.

Preheat the microwave to high heat and cook for two to three minutes. Use a toothpick to test whether the cakes are done; it should emerge from the batter dry.

Lastly, sprinkle powdered sugar over the coffee-chocolate cup cakes.
